POTATO SALAD 6 medium potatoes, cooked and diced 3 hard cooked eggs, diced 1/4 c. diced onion 1/4 c. chopped green pepper 1/4 c. shredded carrots 2 small radishes, shredded Mix 1/2 cup (or more) low calorie mayonnaise, 1 teaspoon mustard, 1 teaspoon vinegar and 2 packages Sweet 'N Low. Combine all ingredients. Refrigerate until served. Salt to taste. (I cook my potatoes in Mrs. Dash with no salt.) Food Exchange: 1/2 cup serving equals 1 bread.
