PITA BREAD

3/4 c. hot water
1/4 tsp. salt
1 tsp. sugar
1 pkg. dry yeast
2 c. flour

Combine hot water, salt and sugar. Stir to dissolve.
Let stand until warm. Sprinkle with yeast and let dissolve.
Add flour, 1/4 cup at a time. Knead thoroughly. Form into 12
small balls of equal size. With rolling pin, roll into 5-inch
circles. Place on baking sheet. Bake at 500 degrees for 5 to 7
minutes until puffed and golden brown. Be sure oven is up to
500 degrees before you put pitas in to bake. 12 pitas. Each equals 1
bread exchange.
