DIABETIC CAKE 1 c. raisins 1 tsp. soda 2 eggs 2 c. flour 2 tsp. liquid sweetener 1 tsp. salt 1 tsp. vanilla 1/2 c. grated carrots 1/4 c. oil 1/2 c. chopped nuts 1 tsp. baking powder Place raisins and carrots in a mixing bowl. Add soda and pour 1 cup boiling water over them and let stand until cooled. Beat eggs then add sweetener, oil and vanilla. Sift flour, salt and baking powder. Add slowly to eggs, raisins and nut mixture and oil. Bake in loaf pan at 350 degrees for 35 to 40 minutes.
