BANANA-DATE MUFFINS 2 c. plus 1 Tbsp. flour 2 Tbsp. baking powder 3/4 tsp. cinnamon 1/2 tsp. salt 1/2 c. each sugar lo-cal margarine 1 egg 1 tsp. vanilla extract 3 medium bananas, peeled and mashed 3/4 oz. bran flake cereal 12 pitted dates, sliced Preheat oven to 400 degrees. Onto sheet of wax paper or paper plate, sift together flour, baking powder, cinnamon and salt; set aside. In medium mixing bowl combine sugar, margarine, egg and vanilla; using electric mixer, beat until light and fluffy. Add bananas and stir to combine; add flour mixture and beat until well blended. Stir in cereal and dates. Spray twelve, 2 1/2-inch diameter muffin pan cups with nonstick cooking spray; fill each cup with an equal amount of batter (each will be about 2/3 full). Bake for 20 to 25 minutes (until muffins are lightly browned and toothpick inserted in center comes out dry). Remove muffins to wire rack to cool. Serves 12, 208 calories each.
