STIR-FRIED CABBAGE

1 Tbsp. plus 1 tsp. diet
margarine
2/3 c. sliced celery
2 c. shredded green cabbage
1/2 c. chopped green or red
bell pepper
1/3 c. chopped onion
1 Tbsp. plus 1 tsp. soy sauce
dash of pepper or to taste

In a 10-inch nonstick skillet heat margarine over high
heat until bubbly and hot; add celery and cook, stirring
frequently and quickly for 1 minute. Add cabbage, bell pepper
and onion and continue to stir-fry until vegetables are ten-
der-crisp, 2 to 3 minutes; add soy sauce and pepper, stir well
and cook for 1 minute longer. Serves 4, 40 calories each.
