BROCCOLI AND RICE CASSEROLE

4 oz. Cheddar cheese, shredded
1/2 c. each: mushrooms, diced
onion and skim milk
1 Tbsp. plus 1 tsp. reduced
calorie margarine
1 c. cooked long grain rice
2 pkg. (10 oz. each) frozen
broccoli, chopped and
thawed (about 4 c.)
1 tsp. salt

Preheat oven to 350 degrees. Spray 2 quart casserole with
nonstick cooking spray; set aside. In a 3 quart saucepan
combine all ingredients except broccoli and salt. Cook over
medium heat, stirring constantly, until cheese and margarine
are melted. Add broccoli and salt and cook, stirring frequent-
ly, until broccoli is heated, about 2 minutes. Turn into
sprayed casserole and bake until mixture is heated throughout
and broccoli is tender, about 30 minutes. Serves 4, 246
calories per serving.
