LIME BROILED CHICKEN AND BACON PITAS 4 to 5 oz. chicken cutlets 2 Tbsp. lime juice 1/8 tsp. salt and pepper 2 Tbsp. plus 2 tsp. mayo 8 (1 oz.) wheat pitas, 1/2 1 1/2 c. lettuce 1/8 tsp. each: thyme, basil, rosemary and oregano, crushed 2 medium tomatoes, sliced 4 slices crisp bacon, cut in 1/2 Line jelly roll pan with foil. One at a time, place cutlets in large plastic bag. Pound lightly until flat and thin. Carefully remove and place in pan. Sprinkle cutlets with lime, salt and pepper. Rub in surface and let stand 5 minutes. In small bowl, stir mayo and herbs; set aside. Preheat broiler. Broil cutlets in pan 2 to 3 minutes on each side; until brown and cooked through. Slit heated pitas and fill each with lettuce and tomato; spread with 1/8 mayo mix- ture. Cut chicken in 1/2 and place into pita with 1/2 bacon slice.
