GOLDEN LOAF CAKE

3/4 c. warm water
1 pkg. or cake Fleischmann's
yeast (active dry or
compressed)
1 Tbsp. sugar
2 1/4 c. sifted cake flour
1/2 c. (1 stick) unsalted
margarine
1 c. sugar
2 egg yolks, beaten
1 egg, beaten
1 tsp. vanilla

Measure warm water into large bowl. Sprinkle or crumble
in yeast. Add 1 tablespoon sugar and stir until dissolved.
Add 1 cup flour; beat until smooth. Cover; let rise in warm
place, free from draft, until double in bulk, about 30 minutes.
Cream margarine; gradually add 1 cup sugar and cream together.
Add beaten egg yolks, beaten egg, vanilla and remaining flour.
Beat well. Pour into a well greased 8 x 8 x 2-inch pan. Cover
and let rise in warm place until doubled in bulk, about 1 hour.
Bake in moderate 350 degrees oven about 40 minutes or until done.
Remove from pan; cool. Cover top and sides of cake with orange
frosting. Makes 12 (2 x 2 1/2-inch) pieces. Sodium content -
7.3 mg./piece.

Orange Frosting:
1/2 c. (1 stick) unsalted
margarine
2 1/4 c. sifted confectioners
sugar
2 Tbsp. orange juice
1 Tbsp. grated orange rind
Cream margarine until light and fluffy. Add confection-
ers sugar and orange juice and beat until smooth and creamy.
Beat in grated orange rind until well blended. Sodium
content - .3 mg./tablespoon.
