LO-CAL CHICKEN-MICROWAVED 8 oz. can pineapple tidbits and juice 1 Tbsp. soy sauce 1 Tbsp. wine vinegar 2 Tbsp. Dijon mustard 1/2 tsp. ginger powder 4 pkg. lo-cal sweetener 2 to 3 lb. chicken, cut up fresh sliced mushrooms Mix together pineapple, soy sauce, vinegar, mustard, ginger powder and sweetener in a bowl. Microwave on High 1 minute. Place chicken in single layer in baking dish. Spoon sauce and pineapple over. Cover with plastic wrap; microwave on High 10 minutes. Place sliced mushrooms on top of chicken and microwave 10 minutes or until chicken is done. Serve with rice and a green vegetable.
