EASY SPICED ONIONS
(Serve Hot Or Cold)
18 medium-small white onions,
peeled but whole
2 c. boiling water
3 chicken bouillon cubes
1/2 c. vinegar (white
preferred)
sugar substitute to equal 7
Tbsp.
1/2 tsp. salt
1/4 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. nutmeg
1 Tbsp. dry mustard
pepper

Cook onions until tender. Dissolve bouillon cubes in
boiling water and add everything except the onions. Simmer for
15 minutes. Pour spicy broth over onions and let stand at
least 1/2 hour. Then reheat or chill. Serves 6, about 44
calories for 3.
If you use canned small onions, reduce all spice broth
ingredients 1/2. Serves 4.
