CUSTARD PIE FOR DIABETICS 4 eggs 1/8 tsp. nutmeg 1 tsp. lemon peel, grated pinch of salt 3 c. skim milk 32 drops Sweeta 1 tsp. vanilla 1 (9-inch) pie shell Beat eggs slightly with salt, nutmeg and lemon peel. Stir in remaining ingredients. Pour into crust. Bake at 450 degrees for 10 minutes. Reduce heat to 300 degrees and bake 45 minutes longer, until center is almost set but still soft. (Do not overbake for custard sets as it cools.) Cool on wire rack.
