FLORENTINE SALAD 1 large lemon Jello-O (diet) 2 c. water 1 c. low fat cottage cheese 1 c. light mayonnaise 2 Tbsp. vinegar 2 Tbsp. chopped onion salt and pepper to taste 1 pkg. frozen chopped spinach, thawed, drain 1 c. chopped celery Make Jell-O with boiling water. Cool; add cottage cheese and mayonnaise. Mix well. Add vinegar, onion, salt and pepper. Thaw and drain spinach; add to first mixture and then add celery. Pour in square or oblong pan. When set, cut into squares. Serve on lettuce. Serves 16.
