SNOWBALL CAKE
(Diabetic)
1 recipe angel food cake (or 1
bought angel food cake)
1 Tbsp. plus 2 tsp. unflavored
gelatin (2 pkg.)
1/3 c. cold water
1/2 c. boiling water
1/4 tsp. Sucaryl
3/4 c. crushed pineapple,
drained
3/4 c. juice from crushed
pineapple
1/4 tsp. salt
2 pkg. D-Zerta topping,
prepared according to
directions

Cut off brown from angel food cake and break into small
pieces. Dissolve gelatin in cold water. Add boiling water,
Sucaryl, pineapple juice, crushed pineapple, salt and lemon
juice. Mix well; put in refrigerator. When partly jelled,
add 1/2 of whipped topping and fold in gently. Using a shallow
square pan, layer the cake pieces and the gelatin mixture. Top
with a layer of plain whipped topping. Chill until set.
Yield: 10 servings; one serving equals 1 bread.
