BAKED RED SNAPPER
(180 Calories Per Serving)
2 lb. fresh red snapper
2 Tbsp. lemon juice (fresh)
3/4 c. hot and spicy vegetable
juice
1/2 c. chopped onions
1/4 c. green onions
1 Tbsp. snipped parsley
1 tsp. butter

Place fish in greased baking pan. Season with salt and
pepper. Drizzle lemon juice over fish. Bake fish at 350 degrees for
about 10 minutes. Saute in skillet onions, green onions,
parsley and butter. Add spicy vegetable juice. Simmer for
about 10 minutes. Remove fish from oven and drain off excess
liquid. Pour simmered sauce over fish. Return to oven and
bake for about 15 minutes more or until fish flakes easily when
tested with a fork. Baste with sauce occasionally. Makes
about 6 servings.
