SALMON LOAF 1 can salmon 1 can cream of celery soup, undiluted 1 c. dry bread or cracker crumbs 2 eggs 1/2 c. chopped onion 1 Tbsp. lemon juice 1/4 c. mayonnaise Mix all together and bake at 350 degrees for 1 hour. We have a good recipe for pickled salmon, similar to pickled herring. Take the fish, clean, skin and fillet; sprinkle the pieces with salt and let stand overnight. The next day, bring a kettle of water to a boil and add some of the fish pieces, wait until water comes to a boil again for a few minutes and then spoon out the fish. Repeat until you have as much fish as you wish to pickle. Then, in another pan, bring to a boil 1 cup of vinegar, 1/2 cup of sugar and pickling spices. Then pour this mixture over the prepared salmon and raw onion rings; allow to marinate for 24 hours. Another recommended recipe for good eating comes from Weight Watchers for baked salmon. It's called "fish creole" and it calls for 1/2 diced green pepper, 1 tablespoon diced celery, 3 tablespoons water, 1 envelope or cube of chicken bouillon, 2 ounces of canned mushrooms (sliced), 1 1/2 table- spoons of onion flakes, 1 cup of tomato juice and salmon fillets. Combine all the ingredients in an oven-proof baking dish and bake, uncovered, until the fish is flaky. Do not overcook.
