BAKED CHICKEN 6 chicken legs 6 chicken thighs Dijon mustard salt and pepper to taste buttermilk fine dry bread crumbs Spread chicken legs and thighs lightly with Dijon mustard. Sprinkle with salt and pepper. Dip each piece in buttermilk then coat with fine dry bread crumbs. Place chicken in baking pan, cover with foil and bake at 400 degrees for 30 minutes. Remove foil, increase heat to 450 degrees and bake 15 to 20 minutes longer or until tender when tested with fork. This is good diet recipe, chicken may be skinned prior to baking.
