SPINACH SALAD

10 oz. (8 c.) fresh spinach
4 sliced green onions
1 c. sliced mushrooms
1 (5 oz.) can drained, sliced
water chestnuts
1/4 c. vinegar
1 Tbsp. sugar
2 Tbsp. water
1/2 tsp. salt
1/4 tsp. dry mustard
2 Tbsp. imitation bacon bits

Wash spinach. Tear into bite size pieces. Combine with
onions, mushrooms and chestnuts in large bowl. Cover and
refrigerate. Combine vinegar, sugar, water, salt and mustard.
Heat in microwave 45 seconds until boiling. Pour hot dressing
over spinach mixture. Toss to mix evenly. Sprinkle with bacon
bits. Only 60 calories per serving.
