LOW CALORIE EGGPLANT DELIGHT 1 onion, sliced thin 1/4 large green pepper, chopped fine 2 Tbsp. diet margarine 3 c. eggplant, peeled and cubed 2 c. tomatoes 1/2 tsp. salt 1/8 tsp. pepper Saute onion and pepper in margarine in covered skillet until soft. Add eggplant, tomatoes, salt and pepper. Stir and cover pan; simmer until eggplant is soft, about 10 minutes. Makes 6 (1 cup) servings.
