SPOON BREAD

2 c. milk
1 Tbsp. butter
1/2 c. yellow cornmeal
2 eggs
3/4 tsp. salt
1/4 tsp. baking powder

Pour 1 1/2 cups milk into saucepan; add butter and heat
to scalding. Mix cornmeal into remaining milk and stir into
hot milk. Bring to boil, stirring constantly. Turn heat to
low and cook 2 minutes, stirring until mixture is very thick.
Beat eggs with salt and baking powder; gradually stir in hot
mixture. Turned into greased baking dish. Bake at 350 degrees for 30
to 40 minutes or until knife in center comes out clean. Serve
warm. Contains 140 calories per serving.
