SPOON BREAD 2 c. milk 1 Tbsp. butter 1/2 c. yellow cornmeal 2 eggs 3/4 tsp. salt 1/4 tsp. baking powder Pour 1 1/2 cups milk into saucepan; add butter and heat to scalding. Mix cornmeal into remaining milk and stir into hot milk. Bring to boil, stirring constantly. Turn heat to low and cook 2 minutes, stirring until mixture is very thick. Beat eggs with salt and baking powder; gradually stir in hot mixture. Turned into greased baking dish. Bake at 350 degrees for 30 to 40 minutes or until knife in center comes out clean. Serve warm.
