STUFFED POTATOES

2 large potatoes
2 Tbsp. snipped chives
1 tsp. salt
dash of pepper
paprika
1/4 c. plain yogurt
1 Tbsp. skim milk
1/8 tsp. garlic powder
2 Tbsp. grated Parmesan cheese

Scrub potatoes; prick with fork. Bake potatoes in a
375 degrees oven for 70 minutes or until done. Slice potatoes in half
lengthwise. Scoop out inside, leaving shells intact. Mash
potatoes. Add yogurt, chives, milk, salt, garlic powder and
pepper. Beat until fluffy. Spoon or pipe the potato mixture
into each potato shell. Sprinkle the top of each potato with
cheese and paprika. Return to oven; bake 10 minutes or until
heated through. If desired, place under broiler to lightly
brown tops. Makes 4 servings.
