BANANA CREAM PIE 1/2 c. evaporated skim milk 3 eggs 3/4 tsp. vanilla 1/4 tsp. salt 1 1/4 c. regular skim milk 1 c. sliced bananas 1 Tbsp. lemon juice sugar substitute to equal 1/2 c. sugar 1 graham cracker crust Beat eggs, salt and evaporated skim milk until well blended. Add regular milk and sugar substitute. Cook in top of double boiler until mixture is consistency of soft custard. Add vanilla. Stir well and remove from heat. Toss bananas with lemon juice and arrange in pie shell. Pour custard over bananas and chill until set.
