BRAN BUTTERMILK MUFFINS 1 1/2 c. buttermilk 1 1/2 c. whole bran cereal 2 Tbsp. Sweet 'N Low 2 Tbsp. vegetable oil 1 egg, beaten 1 1/4 c. all-purpose flour 2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt Combine buttermilk and cereal. Let stand 5 minutes. Mix in lo-cal sugar, oil and egg. Combine flour, baking powder, baking soda and salt. Make a well in the center. Add bran mixture and stir until moist. Spoon into muffin pans coated with vegetable cooking spray. Fill 2/3 full. Bake at 400 degrees for 20 to 25 minutes. Yields 12 muffins (about 115 calories each).
