HEALTHY OPEN FACE SANDWICH 1/2 pkg. (5 oz.) frozen asparagus lettuce leaves 3 slices whole wheat bread, toasted 6 (4/5 oz.) slices lean, cooked ham 3 (3/4 oz.) slices Swiss cheese 1/4 c. low-fat plain yogurt 1/4 c. reduced calorie mayonnaise 3/4 tsp. lemon juice 1/8 tsp. dry mustard pimiento strips Cook asparagus according to package directions, omitting the salt. Drain. Place lettuce on each toast slice. Top with 2 ham slices, cheese slice and 3 asparagus spears. Combine yogurt, mayonnaise, lemon juice and dry mustard in small saucepan. Cook over medium heat, stirring constantly, until heated (do not boil). Spoon sauce over sandwiches. Garnish with pimiento strips. Makes 4 servings at 259 calories each.
