DIET BOSTON CREAM PIE 2 oz. Arnold Melba thin white bread, crumbled 2 eggs 2/3 c. Alba skim milk powder 2 tsp. vanilla extract 2 tsp. butter flavoring 1/4 tsp. almond flavoring 1/4 tsp. coconut flavoring 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. lemon rind, grated 1/2 c. crushed pineapple, unsweetened 4 packs Sweet 'N Low Beat egg whites until stiff. Add Sweet 'N Low, extracts or flavorings and beat again. Add egg yolks and all remaining ingredients. Beat with electric mixer at medium speed until smooth. Put crushed pineapple in blender to puree. Then fold in pureed pineapple in egg mixture, mix until smooth. Place batter in 8-inch pie plate that has been sprayed with Pam. Bake in 350 degrees oven for 30 minutes. Cool. Slice cake in half to form two layers.
