LIGHT'N FRUITY PIE (DIET) 1 pkg. sugar-free gelatin (any flavor) 2/3 c. boiling water 2 c. ice cubes 3 1/2 c. or 8 oz. Cool Whip 9-inch graham cracker crumb crust 1 c. fresh fruit (peaches, blueberries, raspberries, strawberries or apricots) or 1 can diet peaches or diet fruit Completely dissolve gelatin in boiling water, stirring about 3 minutes. Add ice cubes and stir constantly until gelatin is thickened, about 2 to 3 minutes. Remove any unmelted ice. Using wire whip, blend in Cool Whip, then whip until smooth. Fold in fruit. Chill until mixture will mound. Spoon into pie crust. Chill 3 hours.
