YOGURT BAKED CHICKEN 1 c. plain yogurt 1 Tbsp. fresh lemon juice 1 Tbsp. soy sauce 3/4 Tbsp. ground coriander 1/8 tsp. curry powder 1/8 tsp. pepper 2 whole chicken breasts, split and skinned (4 half breasts) Combine yogurt, lemon juice, soy sauce, coriander, curry powder and pepper in a 1 1/2-quart rectangular baking dish. Turn chicken breasts in sauce to coat all sides. Cover and marinate several hours or overnight in refrigerator. Heat oven to 375 degrees. Bake chicken, uncovered, 40 to 45 minutes or until tender, basting frequently with sauce. Makes 4 servings. With this you might serve a baked and peeled potato and a green salad.
