BANANA WALNUT CAKE "SUGARLESS" 2/3 c. mashed bananas (mash ripe banana with fork) 1/2 c. butter, softened 3 large eggs 3/4 c. water 2 c. unbleached white flour 2 tsp. baking powder 1 tsp. baking soda 1 tsp. cinnamon 1 c. chopped walnuts or 1/2 c. walnuts and 1/2 c. raisins (pecans may be used) In mixing bowl, beat together mashed banana and butter until creamy. Add eggs and water. Beat well. Stir in flour, baking powder, baking soda and cinnamon. Beat until smooth. Add chopped walnuts. Spoon batter into an oiled and floured 9 x 13-inch baking pan. Spread batter evenly in pan. Bake at 350 degrees for 20 minutes or until a knife inserted comes out clean. Cool and cut into squares. Serves 8 to 10 people.
