DIABETIC CAKE "SUGARLESS" 1 c. raisins, cooked in 1 cup water and cooled 1 c. prunes, cooked in 1 c. water and cut up 1 c. unsweetened applesauce 2 eggs 1/4 c. Sweet 'N Low 3/4 c. Wesson oil 2 c. self-rising flour 1 tsp. vanilla 1 tsp. cinnamon 1 tsp. nutmeg 1 tsp. soda 1 c. pecans or black walnuts, chopped Drain raisins and prunes. Dredge nuts and fruit in flour; beat eggs and applesauce. Combine all other ingredients and bake in sheet pan at 350 degrees for 35 to 40 minutes.
