NO SALT VEGETABLE MEDLEY

1 eggplant, cubed
1 green and 1 yellow zucchini,
cubed
2 large onions, chopped
3 large tomatoes, chopped
1 pepper, chopped
2 cloves garlic
oregano
sweet basil
parsley
juice of 1/2 lemon
1/4 c. white wine
oil

Saute onion and garlic in oil until limp. Add vegeta-
bles and seasonings. Simmer until done. Great side dish or
served with rice.
