APRICOT SNOW

6 oz. dried apricots
1 1/2 c. boiling water
1 envelope unflavored gelatin
1/4 c. cold water
1/3 c. apple juice concentrate
1/2 c. orange or pineapple
juice
3 egg whites
1 Tbsp. grated orange rind
(optional)

Place apricots in saucepan and cover with boiling water.
Allow to stand one hour. After apricots have softened, simmer
over medium heat 20 to 30 minutes. Cool. Puree this mixture
in food processor or blender. Return puree to saucepan.
Soften gelatin in cold water, then add to fruit puree. Add
concentrate, orange rind and juice to puree. Heat 2 to 3
minutes. Beat egg whites until stiff and fold into apricot
mixture. Pour into serving dish or individual dessert dishes
and chill until firm. Makes 6 to 8 servings.
