SALTED PEANUT CRISPS

1 c. shortening (part butter
or margarine)
1 1/2 c. brown sugar, packed
2 eggs
2 tsp. vanilla
3 c. Gold Medal flour
1/2 tsp. soda
1/2 tsp. salt
2 c. salted peanuts

Heat oven to 375 degrees. Mix shortening, sugar, eggs and
vanilla; blend flour, soda and salt. Add peanuts to mixture.
Drop by teaspoon (rounded) on lightly greased baking sheet.
Flatten with bottom of greased glass, dipped into sugar. Bake
8 to 10 minutes until golden brown. Makes 6 dozen 2-inch
cookies. If you use Gold Medal self-rising flour, omit soda
and salt.
