EASY APPLE CAKE 1 3/4 c. sugar 2 c. flour 1 tsp. cinnamon 1 tsp. salt 1 tsp. baking soda 3/4 c. oil 3 eggs 1 tsp. vanilla 3 c. sliced peeled apples 1/2 c. chopped nuts or raisins (optional) Mix ingredients in bowl. Mixture will be very thick. Fold in apples. Bake in greased and floured pan (tube or 13-inch long), about 45 to 50 minutes in 350 degrees oven. Can be baked in muffin tins approximately 30 minutes. When cooled, sprinkle with confectioners sugar or serve with whipped top- ping.
