ZUCCHINI SQUASH SPICE CAKE|
1/2 c. margarine
1 c. sugar
2 c. grated squash
1/2 c. applesauce
1/4 c. orange juice
2 1/2 c. flour
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
1/2 c. nuts
1/2 c. raisins
1 tsp. vanilla
Cream margarine and sugar until light and fluffy. Add
egg, squash and applesauce. Beat well. Add flour and spices
alternately with orange juice. Stir in walnuts and raisins.
Pour in greased and floured 9 x 13-inch or two (8-inch) pans.
Bake at 350 degrees for 30 minutes.
