MINCEMEAT REFRIGERATOR COOKIES

3/4 c. shortening
1 c. sugar
1/2 tsp. vanilla
1 egg, beaten
2 1/2 c. sifted flour
1/2 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1/2 c. mincemeat
1/2 c. chopped nuts

Cream together shortening and sugar until light and
fluffy. Add vanilla and eggs and mix well. Sift together
flour, soda, salt and cinnamon. Fold gradually into creamed
mixture alternately with mincemeat. Add nuts. Mix into a
stiff dough; form into rolls. Wrap in wax paper and store in
refrigerator. Slice 1/4-inch thick and bake on ungreased
cookie sheet in medium 375 degrees oven about 15 minutes. Makes 7
dozen.
