1 c. shortening or 1/2 c.
margarine and 1/2 c.
1 c. light brown sugar
1 c. white sugar
2 eggs, beaten slightly
1 1/2 c. flour
3 c. oatmeal (not instant)
1 tsp. baking soda
3/4 tsp. salt
1 tsp. vanilla
1 c. raisins
1/2 c. coconut (optional)
Cream shortening with sugars. Stir in eggs and vanilla.
Add dry ingredients. Fold in raisins. Drop by teaspoon on
greased or foiled cookie sheet. Bake at 350 degrees for 12 to 15
minutes. Since dough is stiff, it is easier to mix by hand.
Makes approximately 3 to 5 dozen.
