SUGAR CRUSTED RHUBARB SQUARES

2 1/2 c. flour
1 tsp. baking soda
1 tsp. salt
1 1/2 c. brown sugar, packed
1 beaten egg
1 c. sour milk
2/3 c. cooking oil
1 tsp. vanilla
1 1/2 c. finely diced rhubarb
1/2 c. chopped walnuts

Topping:
1/2 c. granulated sugar
1 Tbsp. melted oleo or butter
1 tsp. ground cinnamon

Sift together flour, baking soda and salt in a bowl.
Mix in brown sugar. Combine egg, oil, sour milk and vanilla.
Add to dry ingredients, blending well. Stir in rhubarb and
walnuts. Spread batter into greased 9-inch square pan.
Combine sugar, butter and cinnamon. Mix well and sprinkle over
batter. Bake at 325 degrees for 55 minutes or until done. Makes 9
squares. Serve warm or cold.
Note: To make sour milk put 1 tablespoon lemon juice or
vinegar in bottom of measuring cup and fill to 1 cup line with
milk. Stir and allow to stand 10 minutes.
