FRESH APPLE MINI CHIP CAKE
(With Cream Cheese Frosting)
3 eggs
1/2 c. bottled apple juice
3 c. unsifted all-purpose
flour
1 tsp. cinnamon
3/4 tsp. salt
1 c. semi-sweet chocolate mini
chips
3/4 c. finely chopped nuts
1 c. cooking oil
2 tsp. vanilla
1 3/4 c. sugar
1 tsp. baking soda
3 c. diced, peeled tart apples

Beat eggs slightly in large mixing bowl; add oil, apple
juice and vanilla. Combine flour, sugar, cinnamon, baking soda
and salt; stir into batter until smooth. Add apples, mini
chips and nuts; stir until evenly mixed. Pour into two well
greased and floured 9-inch round layer pans or one 9 x 13-inch
pan. Bake at 350 degrees for 40 to 45 minutes, or until cake tester
inserted in center comes out clean. Cool 10 minutes. Remove
from pans. Cool completely. Prepare Cream Cheese Frosting.
Spread half of frosting on bottom layer; top with second layer.
Spread remaining frosting on top of cake.
Garnish: Sprinkle with cinnamon, if desired. Makes 10
to 12 servings.

Cream Cheese Frosting:
1 (3 oz.) pkg. cream cheese,
softened
2 c. confectioners sugar
1 tsp. vanilla
1 to 2 tsp. milk
Beat cream cheese, softened, in small mixer bowl until
smooth and well blended. Gradually add confectioners sugar;
stir in vanilla. Beat until smooth (milk may be added to
achieve spreading consistency).
