OATMEAL CAKE 1 1/2 c. boiling water 1 c. quick cooking oatmeal 1/2 c. butter 2 eggs 1 1/2 c. flour, sifted 1 tsp. cinnamon 1 tsp. soda 1 c. white sugar 1 c. brown sugar 1 tsp. vanilla 1/2 tsp. salt 1 tsp. baking powder Frosting: 1 1/2 sticks butter 1/4 c. plus 2 Tbsp. milk 1 1/2 c. brown sugar 1 1/2 c. nuts 1 1/2 c. coconut 1 1/2 tsp. vanilla Pour boiling water over oatmeal; cool. Cream butter, sugars and vanilla until light and fluffy. Add eggs and oatmeal mixture; blend. Add sifted dry ingredients; mix well. Pour into 13 1/2 x 9 1/2 x 2-inch greased pan. Bake at 350 degrees for 35 to 40 minutes. Frosting: Mix ingredients; boil for 1 minute. Spread on warm cake. Return to oven and bake about 10 minutes.
