CARROT CAKE 2 c. grated carrots 1 c. sugar 1 tsp. cinnamon 1 c. raisins 1/2 tsp. nutmeg 1 1/3 c. water 2 Tbsp. butter 2 c. sifted flour 2 tsp. baking soda 1 c. chopped nuts Place all ingredients in pot and cook 10 minutes. Remove from heat and cool. Add flour, baking soda and nuts. Mix and bake in loaf pan at 355 degrees for 1 hour and 15 minutes. Note: Line pan with brown paper (grocery bag will do). Grease paper with Crisco shortening.
