RED VELVET CAKE 1/2 c. Crisco 1 1/2 c. sugar 2 eggs 2 c. plain flour 1 Tbsp. cocoa 1/2 tsp. salt 1 c. buttermilk 1 tsp. vanilla 2 oz. red food coloring 1 tsp. baking soda, dissolved in 1 tsp. vinegar Frosting: 1 lb. powdered confectioners sugar 1 stick margarine, or butter, softened 1 tsp. vanilla 1 (8 oz.) pkg. cream cheese, softened 1 c. chopped pecans Cream the Crisco, sugar and eggs. Sift flour, cocoa and salt. Add sifted ingredients alternately with the buttermilk and vanilla; add food coloring to the creamed mixture. Then add soda-vinegar to it. Pour into 2 (9-inch) pans (grease and flour generously). Bake at 350 degrees for 30 to 35 minutes. Frosting: Beat margarine and cheese until light. Gradually add sugar. Mix well; add vanilla and nuts. Frost cooled cake.
