PARADISE COFFEE CAKE

2 c. pkg. biscuit mix, or make
from scratch
1/2 c. buttermilk
1 egg, beaten
1/4 c. sugar
1/4 tsp. soda
1 (1 lb.) can pear halves or
peaches
1/3 c. brown sugar
2 Tbsp. chilled butter or
margarine
1/2 tsp. cinnamon
1 tsp. grated orange peel
(optional)

Stir together biscuit mix, buttermilk, egg, sugar and
soda. Spread in 9-inch round cake pan or square. Cut pears or
peaches into 1-inch slices. Arrange on top of batter (can
sprinkle with raisins, nuts also). Blend brown sugar, butter
or margarine, cinnamon and orange peel together. Dab on pears
and or peaches. Bake in hot oven (400 degrees) for 30 to 35 minutes.
Serve warm with butter.
