CHRISTMAS WREATHS COOKIES|
(Approximately 3 Dozen)
1 c. soft shortening
1/2 c. brown sugar, packed
2 eggs, separated
2 c. sifted flour
1/4 tsp. salt
2 c. chopped nuts, very fine
or dyed coconut
1/2 c. raspberry jam with
red food coloring
Preheat oven to 375 degrees. Mix shortening with sugar until
light and fluffy. Mix in egg yolks, flour, salt and red food
coloring. Chill dough 1 hour. Form into 1-inch balls. Roll
balls in egg whites and roll in chopped nuts. Place 2-inches
apart on cookie sheet. Make slight depression in center of
each cookie. Drop small amount of jam in center of each. Bake
12 to 15 minutes. Remove and place on cooling rack. Run a
very thin green icing over tops and let cool.
