LACY OATMEAL COOKIES|
(Approximately 7 Dozen)
1 c. margarine
2 c. sugar
2 c. quick cooking oatmeal
1/4 c. all-purpose flour
1/2 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
In saucepan melt margarine; remove from heat and stir
in sugar. Sift together dry ingredients; add half to sugar
mixture with 1 egg and vanilla; mix well then add rest of dry
ingredients and remaining egg. Mix well. Drop by scant
teaspoon onto greased aluminum foil lined baking sheet. Bake
at 350 degrees for 8 to 10 minutes or until cookies are lightly
browned. Slip foil off baking sheet and allow to cool com-
pletely on rack. When cold, cookies will easily pull from
foil. Store in airtight container.
