RAISIN FILLED COOKIES Dough: 1 c. sugar 1/2 c. Crisco 1 egg 3/4 c. milk 3 1/2 c. flour 2 tsp. baking powder 1/4 tsp. salt Filling: 1 c. raisins 1 c. boiling water salt 3/4 c. sugar 1 Tbsp. flour 2 tsp. lemon juice Preheat oven to 400 degrees. Blend Crisco, sugar and egg. Stir in milk alternately with sifted dry ingredients. Roll out on floured board to a thin sheet. Cut into round shapes. Put a teaspoon of filling on each then place a second round on top, pressing the edges together. Bake until brown. Filling: Blend sugar and flour. Add raisins and water. Cook until thick. Add lemon juice and salt. Cool before spreading.
