CHEWY OATMEAL COOKIES
(Approximately 1 1/2 Dozen Bakery-style Cookies)
1 c. sugar
2 to 3 Tbsp. molasses
1/2 c. shortening
1 egg
1 tsp. vanilla
1 c. all-purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1 Tbsp. milk
1 c. oats, uncooked

Preheat oven to 350 degrees. Mix together sugar, molasses,
shortening, egg and vanilla. Combine baking powder and soda
with milk in a cup, then add to batter mixing thoroughly. Add
flour, mix, then add oats last. May add 1 or more of the
following: chocolate chips, nuts, raisins, coconut, etc. Drop
by large rounded tablespoons 2-inches apart on greased cookie
sheet. Bake 13 to 15 minutes. Don't overbake. Let cool 2 to
3 minutes before removing from pan.
