RAISIN FILLED COOKIES

3 c. flour
3 c. sugar
1 c. shortening
3 eggs
2 tsp. baking soda
2 tsp. vanilla
1 tsp. baking powder
1 c. buttermilk
1 box raisins
2 Tbsp. cornstarch
water

Preheat oven to 400 degrees. Blend shortening, 2 cups sugar
and eggs together. Stir in milk alternately with baking soda,
1 teaspoon vanilla, baking powder and buttermilk. In a sauce-
pan blend together sugar and cornstarch. Add raisins and
enough water to cover. Cook until thick. Add vanilla and
cool. Set aside until needed. Roll out dough on a floured
board to a thin sheet. Cut into round shapes. Put 1 teaspoon
filling on each then place a second round on top, pressing the
edges together. Bake until brown.
