ORANGE COCONUT CAKE

1/3 c. butter
1/3 c. shortening
1 1/2 c. sugar
2 tsp. grated Florida orange
rind
3 eggs
2 1/2 c. sifted cake flour
2 1/2 tsp. baking powder
1 tsp. salt
1 c. Florida orange juice
1 (3 1/2 oz.) can flaked
coconut
1 Florida orange, sectioned

Cream together butter, shortening, sugar and orange
rind. Add eggs, one at a time, beating well. Sift together
cake flour, baking powder and salt. Add the last to creamed
mixture alternately with orange juice, beginning and ending
with flour. Put batter into 2 greased and lined 9-inch round
cake pans. Bake at 350 degrees for 25 minutes; cool. Fill layers
with orange filling and frost top and sides with 7 minute
frosting. Sprinkle top and sides with coconut.

Orange Filling:
2/3 c. sugar
3 Tbsp. flour
1 c. orange juice
2 egg yolks
2 Tbsp. butter
Mix sugar and flour in saucepan. Add orange juice and
egg yolks. Place over medium heat and bring to a boil, stir-
ring constantly. Cook until thick. Add butter and stir well.
Cool before using.
