DATE BARS

2 c. boiling water
1 c. chopped dates
1 1/2 tsp. baking soda
2 c. white sugar
1/2 c. margarine
2 eggs, beaten
1 tsp. vanilla
2 c. flour
1 tsp. cinnamon
pinch of salt
nuts (optional)
powdered sugar
lemon juice

Pour boiling water over chopped dates to which 1 1/2
teaspoons baking soda has been added. Let stand until luke-
warm. Cream sugar and margarine; add beaten eggs and 1
teaspoon vanilla. Stir together flour, cinnamon and salt.
Stir into creamed mixture, mixing well. Add dates and liquid
and nuts, if desired. Bake 30 to 35 minutes at 325 degrees in large
pan (I use a jelly roll pan). Batter will be very thin.
When cool, frost with powdered sugar mixed with enough
lemon juice to make good spreading consistency.
