NORTH CAROLINA APPLE CAKE 1 (20 oz.) can crushed pineapple 1 1/2 c. sugar 1 1/2 c. oil 3 eggs 2 c. flour 2 tsp. baking soda 2 tsp. cinnamon 2 tsp. vanilla 1 tsp. salt 2 c. shredded apples 3/4 c. chopped walnuts Drain pineapple thoroughly, reserving 2 tablespoons of the syrup for frosting. Combine drained crushed pineapple, sugar, oil, eggs, flour, baking soda, cinnamon, vanilla, salt, shredded apples and chopped walnuts. Mix well. Pour into 4 greased and floured 9-inch round cake pans. Bake at 350 degrees for 35 minutes or until cake tests done when wooden pick comes out clean. Cool in pans 5 minutes. Turn out onto rack and cool completely. Icing: 8 oz. softened cream cheese 1 stick butter, softened 1 lb. confectioners sugar 2 tsp. vanilla Decorate top with apple slices before serving.
