RED VELVET CAKE

1/2 c. shortening
1 1/2 c. sugar
2 eggs
2 oz. red food coloring
2 Tbsp. cocoa
1 tsp. salt
1 tsp. soda
1 c. buttermilk
1 tsp. vanilla
2 1/4 c. plain flour
1 tsp. vinegar

Cream shortening, sugar and eggs. Make a paste of cocoa
and coloring; add to mixture. Sift flour and add it alternate-
ly with buttermilk to which salt is added. Next, add vanilla.
Last mix soda and vinegar together and add. Bake at 350 degrees for
30 minutes in two 9-inch pans. Let cool thoroughly.

Icing:
8 oz. cream cheese
1 stick margarine
1 c. pecans
1 box confectioners sugar (or
maybe less)
1 tsp. vanilla
Mix icing ingredients all together.
